The “MosaïK” of Kuentz-Bas reflects the diversity of grape varieties and Alsatian terroirs. The wines from this line reflect much more than the expression of the grape variety from which they come. They are marked by the diversity of the terroirs of the hillsides of Husseren-les-Châteaux: sandstone, limestone, clay, marl, loess, sand and silt. The TROIS CHATEAUX line, our organic and biodynamic wines range, is made exclusively with our own vines, grown with the principles of BIODYNAMIC viticulture since 2004. Kuentz-Bas has officially received the organic certification for the vintage 2007 and the biodynamic certification (Demeter) for the vintage 2008. The TROIS CHATEAUX wines are authentic and emphasizes the expression of the terroir on which they are grown.
The TROIS CHATEAUX wines are vinified and matured according to ancestral biodynamic practices without modern technology. The grapes are delicately pressed whole, for 8 to 16 hours in order to extract the finest aromas from each berry. The fermentation takes 6 to 8 months, in the most natural way possible, to emphasize the work already done in the vineyard. The fermentation with indigenous yeasts begins and stops on its own. These are authentic wines that expresses the terroir from which they come. In these wines you will discover pleasure, emotion and authenticity thanks to their personality and the imprint of the terroir.
Once the fermentation is completed, the wines are matured on fine lees, before the filtration and the bottling.

The VENDANGES TARDIVES (late harvest) and SELECTIONS DE GRAINS NOBLES (noble rot wine) are made of grapes from our Grands Crus (Eichberg, Pfersigberg, Florimont) ideally exposed to the sun and perfectly suited for the production of highly concentrated grapes. The grapes are harvested several weeks after the rest of the grapes, in accordance to the climatic harvest conditions of the vintage. The grapes are delicately pressed for 12 to 24h to extract delicious nectar with extraordinarily intense aromas. These wines express maturity, ripe fruits and Botrytis, while the expression of the grape variety is more discreet.
Cuvée Caroline, since 1981: Vendanges Tardives are produced exclusively during exceptional vintages, benefiting from windy, cold but sunny conditions at the end of the harvest season. This allows the grapes to become overripe. Each style of overripeness will give complexity and intensity to the wines.
Cuvée Jérémy, since 1983 : Sélections de Grains Nobles are exclusively made from grapes affected by Botrytis (noble rot), meticulously sorted during the harvest, to use only the very best grapes.
These exceptional nectars can only be produced during years that combine all of the required climatic conditions.
